Just saw your ping to me about mayo replacing cooking oil in cakes. I generally use about 2/3 the amount of mayo as oil and adjust with water if it seems a bit dry. The other option, depending on the flavour of the cake, is applesauce -- I decrease water by about 1/3 with that and use oil plus 1/3 of the water amount as applesauce instead (i.e. 2T oil, 1/2 cup water becomes 1/3 cup water and a generous 1/3 cup applesauce). I know some people who use plum or prune compote instead of mayo in dark cakes (like chocolate), but I haven't personally tried it. Good luck!

Just taking a look at your profile. I love your direct approach to self-description. You sure you weren't describing me??? Could have. And I see you've listed Red Skelton. I think he was one of the really GREATS!! I lucked in to finding a DVD put out that had 4 (I think) of his skits on it, along with some of the old commercials. What a kick it was watching those! Then I had to pass it on to my sister, who is as big a fan as I am.
